Who doesn’t love pulled pork? Okay, maybe vegetarians. But, we love it in our family. We buy huge pork loins at Sam’s Club and cut them up and freeze them for later. On busy days, I love throwing one in the slow cooker and make pulled pork for dinner.
This recipe is a definite winner! My 7 year old son gobbled the whole thing up by the time I got to my second bite. I love this recipe because it is so easy! There are only three ingredients so it takes no time at all to throw it together in the morning!
Slow Cooker Rootbeer Pulled Pork
1 2lb Pork Loin
2 cans or 3 cups of rootbeer (I used A&W)
1 18 oz bottle of your favorite barbecue sauce (I used Sweet Baby Rays)
Put the pork loin in the slow cooker and pour the 2 cans of rootbeer over it. Cook it on low for about 8 hours or until the pork shreds easily. Drain the rootbeer and shred the pork with a fork. Pour the bottle of barbecue sauce over the pork and mix it well. Serve it on buns. (I liked it on Kaiser buns the best!)
I’m not sure what it is exactly about cooking the pork in the rootbeer, but it is delicious cooked that way. It tenderizes and flavors the meat.
