I love Thanksgiving. I really can’t even tell you HOW much I love Thanksgiving. It’s not as stressful to me as Christmas can get (although I love Christmas just as much!) and it still brings families together. From almost the time I got married, I’ve always cooked a full Thanksgiving dinner. We haven’t always had it on Thanksgiving – in fact often we’ve spent the actual day being someone else’s guest. But, I’ve always cooked a dinner just for us. I decided that if I ever needed to host, I needed to know how to cook it, right? And, over the years, we’ve had our fair share of hosting, too. The fun of cooking Thanksgiving dinner to me is finding a delicious recipe to add to our traditional ones each year. This year it’s a new side dish – Pumpkin Spice Roasted Butternut Squash.
I was wandering around the grocery store the other day and came across this:
Yes, that is Country Crock ® Pumpkin Spice. It is deeee-licious! Really, even just smeared on a warm piece of toast. I can’t get enough!
And the best part is, Country Crock ® Pumpkin Spice has 0 grams of TransFat, so I don’t even need to feel guilty about eating it!
This is really easy to make, too.
1 Butternut Squash (I got a pretty large one, so if yours is small, you can probably half the rest of the ingredients)
1/2 cup of brown sugar
1/2 cup of Country Crock ® Pumpkin Spice
1. Peel, seed and dice the butternut squash
2. Put the brown sugar and the Country Crock ® Pumpkin Spice in a saucepan. Then, mix and melt until it’s all combined.
3. Pour the melted mixture over the butternut squash and mix it until it’s all coated.
4. Place in a baking dish and bake on 350 for 1 hour (or until the squash is tender).
One of my favorite parts about this dish is that you can easily mix it up the night before then throw it in the oven while your turkey is roasting. Thanksgiving multitasking at it’s finest!
