Magic Cookie Bars + a Giveaway!

One of my favorite treats in the world are magic cookie bars. I first tried them years ago when my husband brought home a box mix from the store. I had never even heard of them! So, I whipped them up and fell instantly in love. Now, I rarely make them because I tend to eat almost all of them myself. I usually don’t even wait for them to cool off before I start cutting into them! They are super delicious and easy to make! And if you make them from scratch instead of from a mix, you can get about three times the bars for about half the cost. Score!

Magic Cookie Bars
 recipe adapted from Eagle Brand

1 stick of butter
3 cups of graham cracker crumbs
1 14-oz can Sweetened Condensed Milk (I used Eagle Brand)
1 cup chocolate chips (I prefer semi-sweet)
1 cup butterscotch chips
1 1/3 c flaked coconut
1 c chopped nuts (optional)

Preheat the oven to 350 degrees. Layer a 9×13 inch pan with tin foil (make sure the tin foil extends over the edges so it’s easy to pull out). Grease the foil with non-stick cooking spray.

In the microwave or a small saucepan, melt the butter. After it’s all melted, stir in the graham cracker crumbs. Press the graham cracker crumbs evenly in the bottom of the pan.

Pour the can of sweetened condensed milk evenly over the graham crackers. Then, sprinkle the remaining ingredients over the milk layer. Yum! Just typing this makes me want to whip up another batch!

Bake it in the oven for about 25 minutes, or until it is lightly browned. Allow it to cool in the pan on the counter for a few hours, or if you’re impatient like me, stick the pan in the fridge. When it’s completely cooled, carefully pull the bars out with the tin foil and cut into squares. This recipe makes about 24 bars – perfect to feed a crowd! (If you can avoid eating the whole pan yourself. Hehe!)
