Instead of serving a whole cake at your kid’s next birthday party serve CUPCAKE TOWERS! The kids will love having their own cake! These are super fun and easy to make.
Confetti Cupcake Tower Recipe (makes 15 towers)
Ingredients (cupcakes) 1 boxed white cake mix plus ingredients to make cupcakes 1/2 cup mini chocolate chips 3 tablespoons sprinkles 1 butter frosting recipe (see below)
Directions (cupcakes) Preheat oven to 350 degrees. Line two regular cupcake tins with 15 liners and 1 mini cupcake tin with 15 mini liners. NOTE: Don’t waste nice liners on the mini cupcakes you will be taking those off. Mix cake mix according to the instructions. Add the mini chocolate chips and sprinkles. Fill each cupcake tin (regular and mini) 3/4 full. Bake 12 to 14 minutes for the mini cupcakes and 20 minutes for the regular size cupcakes. Cool completely in tins.
Butter Frosting Recipe Ingredients (frosting) 3/4 cup butter, softened 2 teaspoons vanilla extract 2 pounds confectioners’ sugar 6 tablespoons water gel food coloring 3 disposal piping bags 3 #3 piping tips 3 tablespoons sprinkles (optional) cupcake sugar decorations (optional)
Directions (frosting) Mix butter until creamy. Add the vanilla and mix until well combined. Add 1 cup of sugar and mix. Add half of the remaining sugar and half of the water. Mix until combined. Add the rest of the sugar and water. Beat until fluffy. Separate into 3 bowls. Add desired color to each bowl. Start with the bottom regular size cupcake first. Using a back and forth motion pipe on confetti strings.
If desired add sprinkles to each level of frosting or wait until the last level. Add the top mini cupcake and repeat what was done to the bottom cupcake.
Top with sugar decorations. This is a LBC original!
