Hello! My name is Leslie. Normally I would be posting over on my blog, Dishing With Leslie. But since I am participating in my very first blog swap, I get to be the guest blogger here today at Love And Laundry. I’m pretty excited to be here! And I am REALLY glad to be paired up with Shatzi! I absolutely love her blog! I’m not necessarily a “crafty” girl. So it’s been nice to follow her posts. How fun is that book bag? Love it! She’s even got some yummy recipes I can’t wait to try!
My blog is primarily about cooking and my adventures in the kitchen. I may throw a few tidbits in about my family life from time to time. Not sure yet, I have only been up for two months now. Two months today to be exact. Happy anniversary to me! lol! Anyway…I absolutely love to cook! I am a big fan of comfort foods and savory dishes. I do tip my hat at dessert every once in a while. And that’s just what I brought to share with you today. This dish currently sits as “most popular” on my blog, and my family cheers (literally) every time I make it! I don’t know, something magical happens to food when you deep fry it I guess. Enjoy!
Cheesecake Burritos –
Ingredients:
1 8 oz block of cream cheese, softened
4 Tbs powdered sugar
1 tsp vanilla
1 tsp cinnamon (especially good if you decide to go with the apple topping)
4 flour tortillas (soft taco size, 6 or 8 “)
1 pt fresh strawberries, washed and sliced
1/4 cup granulated sugar
2 to 4 cups canola oil, for frying
toothpicks, for securing
additional mix of cinnamon and sugar, for sprinkling (about 1/4 cup sugar and 2 tsp cinnamon mixed)
Directions:
Mix sliced strawberries and 1/4 cup granulated sugar in a small bowl and set aside. Pour oil in a deep sided skillet and heat over med/high heat. (It usually takes about 8-10 minutes to be ready.) While oil is heating, mix together the cream cheese, powdered sugar, and vanilla in a small mixing bowl. Mix by hand or electric mixer until smooth. Stir in 1 tsp cinnamon. (This is an optional ingredient, but adds a really nice touch. Especially if you use the apple topping.) Warm up tortillas in the microwave for a few seconds; just to make them softer. Spoon about 1/4 cup of cheesecake mix on to the middle of the tortilla. Fold and tuck to form a burrito, making sure the filling stays inside. Secure with 1-2 toothpicks along the seam. Using tongs, place burritos (one at a time) into the oil. Lightly fry each side for just a few seconds. Remove from oil and cool on paper towels. Remove toothpicks. Lightly sprinkle with the mix of cinnamon and sugar. Top with strawberries. (The strawberries will have had enough time to macerate and make a really nice sauce.) You can get REALLY decadent and add a drizzle of chocolate sauce and some whipped cream if you like. Yum!
Apple Topping:
2-4 apples, halved and sliced (I use a mix of red and green)
1/2 stick of butter
1 Tbs granulated sugar
1 tsp cinnamon
Directions:
Place all ingredients in a small saucepan and let cook down for a few minutes over med/low heat. Just until apples are nice and tender. Proceed with recipe as listed above. Again, some whipped cream and chopped nuts make these EXTRA amazing!
