I have a confession. I’m not a huge St. Patrick’s Day person. Don’t get me wrong. It’s all good fun. But, it’s one of those little holidays that are easy to over look. But this year I’ve been craving all things minty. It may or may not have been the Shamrock Shake sign I saw at McDonald’s last week. These minty brownies sure hit the spot! Even my kids were begging for more! They must take after their mom. ;)
These are pretty easy to make, but they take a little bit of time because there are three layers. The brownie layer, the frosting layer, and finally the smooth and creamy chocolate layer to top it all off. Don’t be scared off by the time, these are definitely worth it!! I made a double batch to share with my neighbor and I almost didn’t send them. I said almost…don’t worry!
For the Brownies:
1 C softened butter
1 C sugar
2/3 C cocoa powder
3 eggs
1 tsp vanilla
1 C flour
pinch of salt
Preheat the oven to 350. Mix the butter and sugar until fluffy and smooth. I usually mix them for 5ish minutes. Add the cocoa powder, eggs and vanilla and mix until smooth. Finally, add the flour and salt and mix until just combined. Bake for 20 minutes or until a toothpick comes out clean.
Allow the brownies to cool completely!
For the mint frosting:
2 C powdered sugar
1/4 C butter, softened
3 Tbsp milk
green food coloring
1 tsp peppermint extract
Mix the powdered sugar and butter until smooth. Add the milk, food coloring, and peppermint extract. Mix until smooth and spread evenly over the cooled brownies. Refrigerate for 1 hour before adding the final chocolate layer.
For the chocolate layer:
1 bag of semi-sweet chocolate chips
Melt the chocolate chips in the microwave. Start with one minute and then stir. Then, 30 second intervals, stirring in between, until the chocolate is completely melted. Move quickly and evenly spread the chocolate over the mint frosting. Allow the chocolate to completely cool before cutting into the brownies.
Enjoy! If you are a mint fan, these are to die for!!!

I’m not into St Patrick’s day either, but these would be good any time, I love mint and chocolate together. I’ve made mint chocolate cupcakes, but not brownies, going to have to make these, they look lovely and fudgy as well! :)
